- 900 g sweet potato
- 350 g leeks
- ½ onion
- 200 g pumpkin
- ½ teaspoon salt, pinch of pepper
- 20 cl plant-based cream
- 2 tablespoons olive oil
- ½ teaspoon spices: coriander, turmeric, cumin
- Sunflower seeds
Preparation steps
- Peel the sweet potatoes, pumpkin and half onion and cut into pieces.
- Cut the leeks into chunks and rinse them.
- Brown the onion in olive oil.
- Add all the vegetables and fry them for 5 to 10 minutes before covering with water.
- Add salt and pepper and bring to a boil.
- Lower the heat and simmer for 30 minutes
- Mix and add the vegetable cream.
- Optionally add sunflower seeds and hazelnut pieces.
- Enjoy the soup hot with the toast topped with hummus, coral lentils and roasted vegetables.
