  • 900 g sweet potato
  • 350 g leeks
  • ½ onion
  • 200 g pumpkin
  • ½ teaspoon salt, pinch of pepper
  • 20 cl plant-based cream
  • 2 tablespoons olive oil
  • ½ teaspoon spices: coriander, turmeric, cumin
  • Sunflower seeds

  • Peel the sweet potatoes, pumpkin and half onion and cut into pieces.
  • Cut the leeks into chunks and rinse them.
  • Brown the onion in olive oil.
  • Add all the vegetables and fry them for 5 to 10 minutes before covering with water.
  • Add salt and pepper and bring to a boil.
  • Lower the heat and simmer for 30 minutes
  • Mix and add the vegetable cream.
  • Optionally add sunflower seeds and hazelnut pieces.
  • Enjoy the soup hot with the toast topped with hummus, coral lentils and roasted vegetables.
